Inspector's notes
Observed the following time/temperature controlled for safety food items in half of standalone 4x4 cold case on retail floor with internal temperatures between 45*F-48*F: blackened chicken breast, seasoned chicken thighs, beef skirt steaks, tri trip roasts, and pollo asada. Per person-in-charge (PIC) internal temperatures of food items had not been verified today and food items had been in unit overnight. Ambient air temperature of one half unit was at 36*F-38*F, via min/max thermometer. Packaged raw fish, raw sausage, and some skirt steaks were at 41*F-43*F located in other half of unit, with an ambient air temperature at 34*F on the other side. Employee marked all TCS foods improperly cold held for disposal and relocated to a designated area at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed 2 spray bottles of no-rinse quaternary ammonia sanitizer with a measured concentration of 500+ ppm quaternary ammonia in the meat market. Observed no-rinse quaternary ammonia sanitizer with a measured concentration of 500+ ppm quaternary ammonia at the chemical dispenser it was dispensed from. Per manufacturer instructions the approved concentration is 150 - 400 ppm. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Sanitizer was diluted to approved levels at time of inspection. Discussed measuring sanitizers using test strips to ensure approved concentrations. Corrective Action: Corrected at time of inspection.

The employee indicated they were thawing the shrimp for immediate packaging prior to cooling them down. The employee was informed that time/temperature controlled for safety must be thawed using the following methods: • Under refrigeration that maintains the food temperature at 41*F or less • Completely submerged under running water: o Water must be 70*F or cooler o Water must have sufficient velocity to float off loose particles o Does not allow ready to eat thawed portions temp. Above 41*F o Does not allow Raw animal food thawed portions temp above 41*F, for more than 4 hours The employee indicated the shrimp had been thawing for less than 2 hours and immediately started working on processing them.
