TCS food items that had been in refrigerator over night such as lobster tails, scallops, calamari, and raw shelled eggs measured with internal temperatures between 53-54 degrees. These items were recommended for discard. Discussed cold holding and probing food items to get accurate temperatures.. According to the Person in Charge (PIC), the walk-in was maintaining food with internal temperatures below 41°F less than 4 hours before the inspection time. The walk-in cooler was able to maintain ambient air temperatures below 41°F when the freezer door was propped open. TCS food in the sushi units was placed there less than 4 hours before inspection time so food from the sushi bar was moved to the walk-in to cool down. The sushi bar will temporarily follow Time as Public Health Control (TPHC) for TCS food. Food in these units will be placed here with starting temperatures below 41°F and be discarded after 4 hours. Discard time must be posted for employees to see. Ensure all TCS food being monitored by cold holding maintains internal temperatures of 41°F or below at all times. These units had ambient air temperatures of: 44°F in the walk-in cooler, 59°F in the bottom right sushi unit, 51°F in the bottom left sushi unit, and 48°F in the top two sushi refrigeration units. The walk-in cooler was able to maintain ambient air temperatures below 41°F when the freezer door was propped open. The freezer door connected to this unit will remain open until this unit is repaired and able to maintain food with internal temperatures of 41°F or below without assistance. The sushi bar will temporarily follow Time as Public Health Control (TPHC) for TCS food. Food in these units will be placed here with starting temperatures below 41°F and be discarded after 4 hours. Discard time must be posted for employees to see. A 24-hour reinspection will occur to ensure the walk-in refrigerator and all 4 sushi bar units are able to maintain food with internal temperatures of 41°F or below at all times.
