Observed raw shell eggs being stored in the same container as unpackaged tortillas in the cold holding unit in the front of the kitchen. Informed person in charge (PIC) that all raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Establishment has started serving ceviche prepared traditionally without a cook step (raw as ready to eat shrimp) but did not have any parasite destruction documentation to verify safety of shrimp being used. MCEHC Chap. 8, Sec. 2, Reg 4(a) [1] - A separate entrance shall be provided from the exterior of the food establishment to the outdoor patio so that a dog will have direct access to the patio without entering the interior of the food establishment or any playground area of the food establishment. In walk-in cooler, large covered container of red chili measured 79 degrees F internally, and another covered container of green chili measured 72 degrees F. Employees said it was prepared last night and had been cooling in the walk-in since then. Items were discarded at time and employees were trained on cooling in shallow, uncovered containers. Please ensure all time/temperature controlled for safety food items are cooled from 135 to 70 degrees F in no more than 2 hours, and all the way down to 41 degrees F in no more than a total of 6 hours.
