Observed the vent pipe for the three compartment installed higher than the compartment basins. Please trim the vent pipe 1" below the compartment basins and install a studor vent for odors. All indirectly plumbed equipment must be air gapped to prevent contamination from a potential sewage backup. All plumbing systems must be maintained in good repair. Establishment makes ice cream in house and makes their own base for ice cream, sorbets, and sherbets. Base is made utilizing pasteurized eggs and half & half. Establishment does not have an approved variance for this process. PIC will discontinue the process for making ice cream until variance is approved.
