Inspector's notes

Observed two large metal containers of meatballs in marinara sauce in the steam table. When probed, internal temperature range was 92 to 116 degrees F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes

In the cold top prep table next to the register, observed a small plastic container cooked onions and a large plastic container cooked steak. When probed, internal temperature range was 48-53 degrees F. In the reach in under the cold top prep table next to the register, observed a large plastic container of cooked steak, two bags of cooked corned beef, a bag of cooked roast beef, and a bag of cooked brisket. When probed, internal temperature range was 49-52 degrees F. Person in charge (PIC) stated items had been in the unit since the night prior. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
