Inspector's notes

Observed taquitos in pull out refrigerated drawer under oven temp at 46*F. Staff stated that food item had been put in unit at 10:30/11am. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Unit had an ambient temp of 47*F. Person in charge put in repair request and will monitor unit. Until it holds proper temp, TCS foods shall be stored in other functioning units. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed chicken, cream cheese, ground beef, shredded beef, black beans, machaca mix, red chile sauce, green chile, milk, cheese enchiladas, guacamole with diced tomatoes, salsa, diced cheese, salad mix with chopped romaine, chimichangas, beef tacos, chicken rolled tacos in the left walk-in cooler at 45-47'F at the time of the inspection. Per datemark and conversation with the person in charge (PIC) these items were prepared more than 4 hours prior to inspection (most were several days ago). Items were embargoed/discarded at the time of the inspection. Ensure all Time/temperature control for safety food (TCS) items are maintained at 41'F or less at all times. Bottle was labeled at the time of the inspection. Ensure all chemical containers are labeled with their common name at all times. Priority Foundation-7-202.11, Pf: Restriction-Presence and Use.... Observed Raid and Spectracide bug spray in a back storage closet at the time of the inspection. Containers were discarded at the time of the inspection. Verified with PIC that they do receive licensed pest control from Ecolab once - twice a month. Educated person in charge that store bought pesticides are prohibited and to only utilize their licensed pest control applicator. Correct By: Corrected At Time Of Inspection

PRIORITY VIOLATION-5-202.11 (A), P: Approved System.... Observed a sprayer nozzle on a long hose attached to the mop sink with an Atmospheric Vacuum breaker (AVB) at the time of the inspection. Educated PIC that constant pressure from a sprayer nozzle downstream from the AVB is prohibited and nozzle must be removed after use. Removed nozzle at the time of the inspection. Please educate employees on this practice. PRIORITY VIOLATION-5-202.13, P: Backflow Prevention, Air Gap.... Observed discharge pipe from 3-compartment sink in the bar area directly placed into the floor drain at the time of the inspection. Educated person in charge that the discharge pipe must have a visible gap (air gap) from the discharge pipe and the floor drain to eliminate backflow of water into the discharge pipe. Provide an air gap prior to re-inspection (Friday, September 1st). PRIORITY VIOLATION-5-205.15 (A), P: System Maintained in Good Repair; According to Law.... Observed standing water in the floor drain of the bar under the 3-compartment sink. PIC stated it was due to the previous shift not clearing the strainer in the line. PIC removed strainer and water was still observed sitting in the floor drain and not fully draining. Repair and maintain free flowing of water prior to re-inspection (Friday, September 1st).
