PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding.=== Observed front reach in cooler with two garden salads and two quiche reading 45-50f. Notified PIC(Person in Charge). PIC stated that the salads were placed yesterday and quiche had been placed two hours prior. Ambient temperature of unit was at 48F with min/max thermometer. PIC discarded salad and placed quiche into a functioning cooler so that it reached proper temperature of 41*F or below. PIC informed inspector front reach in will not be used for food storage until unit can hold proper temp. ====Except during preparation, cooking, cooling, or when time is used as a control all TCS food shall be maintained at 41°F or less.
