Observed prep table in the deli with a rising ambient temperature and foods measured to be between 45 and 52°F above in the prep table and within the reach-in fridge portion. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Unit was found to be breaking at time of inspection and in need of service. PIC moved all foods to the walk-in fridge except for foods listed on the embargo form. Corrective Action: Corrected at time of inspection.

Observed a PVC pipe extension below floor level into the floor drain of a prep sink in the deli department and pipe from equipment dipping into the same floor drain. The pipe for the prep sink must be above the floor drain to prevent backflow. PIC removed PVC extension at the time of inspection and is putting in a work order for the other pipe. Consecutive repeat violation: 2nd. Corrective Action: Correct prior to next routine inspection.
