Observed cooked shrimp 44*F, hummus 45*F, feta cheese 49*F, blue cheese 49*F, mixed greens 44*F, ranch with TCS ingredients 45*F, bloomin sauce with TCS milk 46*F, cooked chicken wings 48*F, pepper jack cheese 47*F, cocktail sauce labeled keep refrigerated 47*F, in the prep table from the previous day per PIC. Also observed prosciutto 50*F, cooked shrimp 44*F, and cheddar cheese 52*F in the prep table pulled from the walk-in within the past hour per PIC. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held greater than 4 hours were discarded by PIC at time of inspection. All TCS foods improperly cold held less than 4 hours were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.
