In prep cooler/45.5F across from the fryers, observed TCS food, including pepperoni, asiago cheese, ham mozzarella lasagna, sliced cheese, cut lettuce, and meatballs, holding at 46F-48F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Ice buildup observed on the cooling coils. Per PIC, the foods were not out of temperature more than 2-3 hours. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. 2nd Consecutive Violation. In prep cooler/45.5F across from the stove, observed TCS food over 41F including mozzarella cheese/48F, pepperoni/55F, chicken breasts/49F, roast beef/45F, cut romaine/50F, sliced cheese/50F, etc. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. The PIC indicated that the unit was open for an extended time about 20 minutes prior when a delivery occurred. The PIC set up ice baths for the TCS food in the open top and transferred TCS foods below to another refrigerator. PIC to monitor the unit and make necessary repairs if needed.
