Inspector's notes

Observed tomato soup, ham and cheese sandwiches, chicken sandwich, and nacho cheese in warmer and steam table with an internal temperature of 115*F-120*f. According to PIC, food had been in steam table for less than 2 hours and were re-heated to 165*f for 15 seconds. It was determined steam table did not have sufficient water to ensure hot temperatures.

Inspector's notes

Observed marinara sauce, shredded lettuce and pico de gallo with an internal temperature of 52-67*F. According to PIC, food had been out for less than 2 hours. It was determined that the lettuce was not submerged in ice and discussed proper methods to ensure temperatures remain below 41*f at all times. Marina sauce and pico de gallo were not submerged in any ice, however PIC stated food is transferred to refrigerated unit in between lunch service. Had discussion with PIC, regarding using time as a control for food safety, if all food is discarded at the end of lunch service.
