observed plastic tubs filled with cooked potatoes, tub was sealed. temperature indicating 125 deg f . also plastic pans of cooked noodles at 51 deg f , beansprouts at 62-64 deg f , all in sealed plastic containers. unable to validate the actual time food preparation/ cooking. 2 tier cooling strategies using ice bath and shallow metal pans reviewed. MCESD cooling guidance document reviewed. provided via email. proper rapid cooling strategies discussed, facility manager removed food out of plastic tub/cooler. use of shallower open metal pans reviewed.

Observed portioned noodles that were recently warmed and portioned approximately one hour prior at 80 Deg. F. in a container. The operator stated that they do this to facilitate service. Suggest using time-as-a-control procedure for this item where the item is documented when it is removed from the refrigerator and discarded after 4 hours. Provided a sample time-as-a-control policy to the operator at the time of inspection. Item was placed in a refrigerator at the time of inspection. Corrective Action: Corrected at time of inspection.
