Observed sani-bucket stored on a shelf above spouted containers of syrup, balsamic, and other condiments in server window area. Informed PIC that sanitizer buckets must be stored in an area that will be contaminate food, utensils, or any single service items. PIC relocated the sanitizer bucket and properly stored it at time of inspection. Chemicals must be stored away from food, utensils, and single service items at all times to prevent contamination. All chemicals were relocated and properly stored by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed the cold holding unit located to the left of the fryers having raw chicken, raw fish, fish/chicken wash (eggs) and cooked chicken wings having an internal temperatures of 45-59*F. Person in charge states these foods were placed in the unit from the walk in cooler less than 4 hours prior to the inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were voluntarily discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed pans stored clean with food debris on food contact surfaces portions of pans in back of house on storage rack. Also observed citrus slicer at bar stored clean with dried on food debris. All food-contact surfaces must be cleaned to sight and touch. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Also discussed with PIC that dishes should be air dried prior to stacking for storage. Corrective Action: Corrected at time of inspection.

Observed leak from walk-in cooler fan compressor spraying condensate through walk-in cooler. Ensure all foods stored in cooler are covered and utilize separate walk-in coolers for cooling until repairs are completed. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
