Inspector's notes

Observed the mechanical warewashing machine with a 0 ppm chlorine concentration. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Person in charge (PIC) will discontinue using the mechanical warewashing equipment until it is repaired and will use the 3 compartment sink to wash, rinse, and sanitize until the machine is repaired. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection.
