In the walk-in cooler, observed a large container of minestrone with a date mark of 03/14 and a small container of sliced tomatoes with a date mark of 03/17. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. In walk in cooler observed a large container of marsala with a date mark of 03/15 and lasagna with a date mark of 03/13. Person in charge (PIC) stated both items were prepared 5 days ago. PIC updated date mark to reflect correct dates. Corrective Action: Corrected at time of inspection.

Observed cooked marinara in 4 deep plastic containers in the freezer probed with a temperature range of 113 - 120 degrees F at 2:55PM. Person in charge stated the items had been placed in the freezer at 1PM. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Person in charge began the reheating process to reheat the marinara to 165 degrees F to restart the cooling process. Corrective Action: Corrected at time of inspection.
