In the walk coolers, observed TCS foods held beyond 7 days including cooked mushrooms made 1/12 bread pudding 1/13, enchilada sauce 1/14, pesto containing raw garlic and oil 1/12, housemade Caesar dressing 1/10, and Asadero cheese 1/13. Per PIC, all foods had been in the cooler since prep. All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). In the left cold table next to the fountain soda machine, Observed sliced tomatoes, diced tomatoes, shredded cheese, sliced cheese, sliced deli turkey, hard boiled eggs, coleslaw, chicken wings and romaine lettuce with a temperature range of 46-58 degrees F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. These items were placed back in the walk-in refrigerator to cool down at the time of inspection. Observed the following items holding between 57 - 67 Deg. F. in the down prep-line refrigerator on the West side of the prep-line: cooked pasta, carnitas, cooked corn, cooked portioned rice, potato salad, sour cream, pico salsa, mixed shredded cheese, spaghetti, fresh mozzarella, cut lettuce, polish sausage, per-jack cheese, sharp cheddar cheese, mild cheddar cheese, salsa, chopped cabbage, and cut tomatoes.
