#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed egg & cheese bagels, egg & cheese croissants, cream cheese, and egg & meat breakfast burritos at 56-58'F in under grill cooler in front of house area. Minimum ambient minimum air temperature measured at 59'F at time of inspection. Per PIC, items with 2/6 date mark were delivered to establishment less than 2 hours prior to inspection. These items were relocated to back reach-in cooler to rapidly cool. All other items were in cooler more than 4 hours. PIC provided log sheet showing temperatures were checked at 3:30 AM and cooler was temped at 52'F at that time. All items in cooler for more than 4 hours were voluntarily discarded at the time of inspection. PIC will ensure other functional refrigeration are used until repairs are completed and cooler is holding below 41'F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
