Observed the main dishwasher with chlorine sanitizer measuring at 0 PPM. Confirmed dishes had been run through the dishwasher today. The person in charge switched out the empty chemical concentrate bottle for a new bottle of chemical concentrate at the time of inspection. After servicing the dishwasher, the chemical chlorine sanitizer was within range (50-100 PPM). Staff to test the sanitizer strength on the first cycle of dishes. Observed several damp wiping cloths on counters throughout the kitchen. Alerted the manager, who moved the wiping cloths from the counters at time of inspection. Re-educated staff on wiping cloth requirements. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths are to be returned to the sanitizer bucket directly after each use and must stay in the sanitizing solution until the next use. This practice not only reduces bacterial load but also prevents bacterial growth. Wiping buckets are to be changed every 4 hours by refreshing the sanitizer and placing new clean towels in the bucket. Corrective Action: Corrected at time of inspection.

Cooked rice from the previous day was discarded by PIC at the time of inspection. The person in charge obtained and provided verification of food protection manager certification. The person in charge placed designated bins labeled for employee items at all work stations. Observed proper hand wash signage was placed at all hand wash sinks at the sushi bar. The person in charge provided proper parasite destruction letters from seafood distributors. Observed the mechanical dishwasher at the bar operate with proper 50-100ppm chlorine sanitizer. Observed all first aid, medications, and employee items were properly stored. Confirmed estabilshment is utilizing time as a control for sushi rice and verified time as a control written policy and time check logs. The person in charge provided sufficient number of sanitizer testing strips for both chlorine and quat-sanitizer. The person in charge properly demonstrated santizer checks and concentrations for each type of sanitizer. Observed all female toilet rooms have been supplied with cover receptacles. Observed establishment underwent extensive cleaning of physical facilities to include fan covers in the walk-in coolers, floor/walls/cielings of the walk in coolers, behind/under/and around equipment on the cook line, food prep areas, and storage racks. Observed all soda guns at the bar were clean to sight and touch. Observed all food debris removed and floor drains cleaned. Observed unnecessary articles and equipment removed from the expo line, dry storage, and other areas of the establishment. The person in charge explained new processes and procedures implemented for food safety and discussed active managerial controls.
