Inspector's notes

Observed two containers of romaine lettuce and spring mix holding at 56-60*F in small salad unit on main prep line. Per manager, items had been in unit for less than 4 hours and were placed into walk-in cooler to rapidly cool to 41*F before re-using. Unit was unplugged - plugged back in at time of inspection - reviewed proper monitoring of TCS foods and coolers. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Corrective Action: Corrected at time of inspection.

One container of American cheese was prepared an hour prior and was placed back in the walk in cooler to cool. One container of American and 2 containers of gouda were in the unit since the day prior. Unit was holding at 49-51*F on inspectors min/max thermometer.
