Observed shredded cheese and cooked sausage cambro tins in the reach in fridge under the pizza prep table with no date marking. Per PIC, foods placed in the fridge had been placed in there the day prior. Observed cut tomatoes 45*F-46*F, cut lettuce 52*F, cooked corn 47*F, sliced cheese 50*F, sliced deli meat 44*F-47*F, raw ground beef 47*F, raw chicken 47*F in the refrigerated pull out drawer underneath the cooktop. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, the TCS food items had been in the refrigerated drawer since the previous day. All TCS foods improperly cold held were discarded by PIC at time of inspection.
