Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands are to be washed at any time contamination occurs and when changing tasks. Inspector's notes

In two prep coolers, observed TCS food holding over 41F including noodles/51-52F, fried, breaded chicken/55F, cooked chicken/50-52F, cooked shrimp/53F, cut cabbage/54F, etc. Observed the temperature of the units at 54F and 56F. The PIC indicated that the food had been out of temperature since lunch and less than four hours. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F or ice was added at time of inspection. Corrective Action: Corrected at time of inspection.

Staff added ice to all TCS food or placed the foods in ice baths to cool and hold cold. The manager indicated that the lids had been open. Ensure lids are closed frequently and thermostats are adjusted to accommodate the busy times of the day. Manager will monitor and service the units as needed.
