Inspector's notes
Observed butter with an internal temperature of 84*F in a closed container sitting behind the grill line. Line cook stated that the butter had been prepped the night prior. Establishment uses time as a control for the butter. Discussed that butter is a TCS food with PIC and discussed time as a control. PIC discarded the butter at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed raw ground beef burger patties and raw chorizo stored over bags and boxes of raw pepper bacon. Informed PIC that all raw animal proteins must be stored according to final cooking temperature. PIC stored all raw animal proteins properly at time of inspection. Discussed proper separation of storage with PIC and employee in charge of putting away deliveries. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Observed items offered to be served undercooked missing the full consumer advisory. These items include, but are not limited to Matt's biggest breakfast, steak and eggs, the hog and chick, egg your way (side), and the big butter burger. Observed consumer advisory reminder statement located underneath the allergen warning; change title to "consumer advisory" or disclaimer. Additionally, a disclosure method needs to be added to the statement at the beginning (ex: "*"). Add the disclosure method ("*") to the name of the menu item, for example: Steak and Eggs*. Offering and serving undercooked proteins requires an approved consumer advisory at all points of sale; and must contain an approved disclosure method and reminder statement. Must provide approved consumer advisory at all points of sale prior to re-inspection. Corrective Action: Correct prior to re-inspection on 5/15/2026.

In the cold holding unit that has all the grab and go items, observed sandwiches (tuna, egg salad, turkey), salads (cut lettuce and tomato), yogurt parfait, cows milk (regular and chocolate), and Naked juice having internal temperatures of 48-61*F. Unit had an ambient temperature of 47*F. Person in charge states the last time the temperature of this unit was checked was more than 4 hours prior to the inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
