Observed meatballs and marinara sauce in hot holding steam table measured at 89-110F. PIC reported items were hot held above 135F and the meatballs and marinara sauce were in the unit for 15 minutes. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed TCS food items (cheese, cut leafy greens) measured 44-50'F in ice bath on food prep table closest to pizza station. Chef stated items are put on ice bath for easy access during lunch hours and are temperature controlled. Observed cut prosciutto (57-60'F) in plates with Saran tightly wrapped; plates observed placed on top of pans above cool line in tabletop prep cooler. PIC stated all items were prepped or brought out of refrigeration less than 4 hours prior. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Suggested time as control for expo ice bath as it would greatly benefit restaurant's operations and needs. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
