Inspector's notes
Observed multiple dairy items (see embargo list) and house-brewed cold brew coffee measured 45-48'F in cooler located opposite of 3-compartment sink. PIC stated all items have been in unit for longer than 4 hours and could not provide time when unit went out of temperature. Ambient temperature of unit measured 56.3'F. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed cooler unit located opposite of 3-compartment sink with an ambient temperature of 56.3'F. Unit was emptied of all TCS food items at time of inspection. PIC agreed to not use unit for storage for any TCS food items until it has been fixed. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Fix prior to re-inspection on 03/31/25. Corrective Action: Correct prior to re-inspection.
