At the main handwashing sink for the cook line and pizza prep area, observed no paper towels or other hand drying provision. A hand drying provision such as paper towels or single use towels are required to be kept available at all times for proper handwashing. Manager had paper towels replaced.

Observed cooked tomato sauce after 1 hour of cooling at 113-140F, inside the walkin in a very deep metal pot that is very hot on the outside. Talked to staff about cooling methods. Manager decided to reheat product. Product reached 165F to reset the cooling. Talked to staff about using smaller containers and freeze sticks (popsicles) to coold down quickly with no lids. Corrective Action: Corrected at time of inspection.
