Both of the handles on the rear hot holding unit have excess soil residue present. Ensure that equipment is cleaned frequently enough to preclude accumulation of soil residues. ** The presence of food debris or dirt on nonfood contact surfaces may provide a suitable environment for the growth of microorganisms which employees may inadvertently transfer to food. Corrective Action: Correct prior to next routine inspection.

Inspector's notes
Observed diced tomatoes (50*F), shredded lettuce (46*F), cheddar cheese (46*F), sour cream (46*F), and cheese blend (46*F) in the bottom of the make-line unit. The diced tomatoes were placed in the unit at approximately 630 am, time of inspection was approximately 2:00 pm. Person in charge voluntarily discarded - see embargo form. The lettuce, cheese, and sour cream were placed in the unit at approximately 10 - 11 am and were relocated to the walk-in to rapid cool. Ambient temperature of the unit was 49.6*F using min/max thermometer. Corrective Action: Corrected at time of inspection.

I advised the person in charge to cover all of the TCS food items and put the cold items in the walk-in and the hot items in the hot holding units. I discussed with the person in charge that they will need to take the temperature of the TCS food items prior to serving. TCS food items should be out of the 'Danger Zone' (42*F - 134*F). Cold holding TCS foods 41*F or less and hot holding TCS foods 135*F or higher. If the TCS foods are in the danger zone, they must be discarded. On July 1st, 2023, the Environmental Services Department started emailing permit card(s) and permit invoice(s) to permittees.
