Observed cooked shrimp in prep cooler with internal temperature of 55*F, the container of cooked shrimp was put on top of other container and was not sitting inside the de cooling well. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Manager stated the cooked shrimp was put in prep cooler less than 2 hours prior to inspection. Manager put the cooked shrimp back to walk-in cooler for fast cooling at time of inspection.
