Inspector's notes

Employee observed walking into the kitchen from restroom and they put on gloves to help fulfill customer orders. When asked to was hands, the employee stated that they washed hands in the restroom. Discussed examples of when to wash hands and and that glove use does not substitute hand washing. The employee was observed properly washing hands and putting on new clean gloves before handling food and equipment. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Shredded lettuce, shredded cheese, diced tomatoes, and guacamole observed with internal temperature range of 50-53*F while being cold held inside the make-line unit designated to customers ordering in the lobby. PIC stated that the unit was checked roughly an 1 hour prior to inspection and the unit and food were both below 41*F. At time of inspection, the ambient temperature of the unit was 51*F according to the refrigerator thermometer and confirmed by inspectors min/max thermometer after 20minutes. PIC relocated all food products mentioned above to the walk-in cooler and left lids slightly ajar to facilitate rapid cooling. PIC submitted a work order for the unit and staff were advised not to use it until it holds an ambient temperature below 41*F. TCS foods must be cold held at 41*F or below to prevent bacterial growth. Discussed the temperature danger zone (range between 41*F and 135*F) with PIC. Corrective Action: Corrected at time of inspection.
