#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed TCS food being held in a refrigerated prep unit with an internal temperature of 45-47*F. Internal temperature registered with an internal probe thermometer. Ambient temperature registered 46*F with a min/max thermometer. Per PIC all TCS food was placed in unit 1hr prior to time of inspection. TCS food items included raw/cooked meats, salsas, sour cream, cheese and lettuce. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrected at time of inspection.

#20 — Proper Cooling Time and TemperaturesPriority3-501.14

Inspector's notes

Observed a large container of green salsa in the walk-in with an internal temperature of 50*F. Internal temperature registered with internal probe thermometer. Per PIC the salsa was cooked the day before, in the afternoon and placed in the walk-in to cool. PIC was unable to verify if the salsa ever reached 41*F during the cooling process. All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Educated PIC on correct cooling methods as well as provided guidance documents. Corrected at time of inspection.

Provide a certified, drinking water safe, RPZ backflow prevention device for the water supply line to the soda fountain carbonator. All piping and fittings on the downstream side of this device must be plastic or stainless steel, no copper or brass. The copper piping on the downstream side of the backflow device for the soda carbonator must be removed and all backflow devices must be tested and certified.2. All soda fountains and ice machines must be installed prior to final permit approval.3. Ensure that drain lines from the soda fountain ice machine and ice bin do not connect to any waste lines. The soda fountain ice machine and/or ice bin must drain separately to a floor sink with minimum in. air-gaps.4. Provide a minimum 1 in. air-gap between the end of the food prep sink drain pipe and the flood rim of the floor sink that it drains into.5. Remove the restricted aerators from the faucets of the three compartment sink so adequate water flow is provided from these faucets.6. Provide washable ceiling tiles above the self-service soda area and front service area where acoustical tiles are currently installed.7.
