Inspector's notes

Observed TCS food being held in a refrigerated reach-in with an internal temperature of 51*F. Internal temperature registered with an internal probe thermometer. Ambient temperature registered 51*F with a min/max thermometer. Per PIC all TCS food had been in unit for greater than 24hrs as of time of inspection. TCS food included sour creme, sharp cheddar, and creme cheese. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Second consecutive violation. Corrected at time of inspection.

Inspector's notes

Observed to-go containers of soup being held on a refrigerated salad bar table with an internal temperature of 95*F. Internal temperature registered with an internal probe thermometer. Per PIC the to-go orders were received <1hr at time of inspection, packaged, then placed on unit until customer arrives to pick up. Educated PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Instructed PIC to keep all soup under hot holding until customer arrives for order. Corrected at time of inspection.

Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Instructed PIC to not place any TCS food items inside unit until repaired to hold temperatures of 41*F or less. Corrected at time of inspection.

PIC provided an invoice for last application of pest control on 10/23/24. Educated PIC on the need to remove dead pests in order to prevent attracting other pests. PIC removed and discarded all dead pests. Corrected at time of inspection.
