Repeat Violation PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you.https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. After discussion with the person in charge it was determined the blue cheese and ranch dressing were within safe time parameters. Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Discussed storing blue cheese and ranch condiment cups in refrigerator. Corrective Action: Corrected at time of inspection. Repeat Violation: 2nd.

After discussion with the person in charge it was determined the blue cheese and ranch dressing were stored at room temperature since 11 AM. Person in charge stated the ranch and blue cheese are normally stored in ice baths, ice baths were not made today due to a malfunctioning ice machine. Predefined Comment: All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Corrective Action: Corrected at time of inspection.

Core-3-302.12, C: Food Storage Containers Identified with Common Name of Food Observed an unlabeled spray bottle filled with clear liquid by the handwashing sink near the fryers. After discussion with the person in charge it was determined that the spray bottle was filled with water. Food and ingredients not readily identifiable on sight which has been removed from the original container shall be labeled with the common name of the food or ingredient.
