Inspector's notes
Observed a covered plastic container of meatballs and marinara in the walk-in with an internal temperature of 51*F. Container was labeled 5/27, PIC stated that the meatballs were cooled the night prior. Instructed PIC to discard meatballs due to not meeting cooling parameters. PIC discarded meatballs at time of inspection. Meatballs embargoed. Discussed proper cooling methods with PIC - shallow (less than 4") metal pans uncovered. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. All TCS foods improperly cooled were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

In the display cooler that holds grab and go items, observed different type of salads and sandwiches (containing tomato, lettuce, chicken), prepackaged meat and cheese, and cows milk having internal temperatures of 57*F. Cooler had an ambient temperature of 56*F. Person in charge states these foods were placed in the cooler less than 3 hours prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Please do not store any TCS foods in the unit until working properly. Corrective Action: Corrected at time of inspection. 2ND REPEAT VIOLATION.

Observed line cook touch face and go to back of kitchen through doorway with gloves and proceed to touch clean dishes without washing hands and switching gloves. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Line cook washed hands and put on new gloves at time of inspection. Corrective Action: Corrected at time of inspection.

All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection.
