#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed containers of mozzarella cheese, provolone cheese, American cheddar cheese, sliced ham, sliced turkey, cut cucumbers, caramelized onions, pulled chicken, grilled chicken, cut tomatoes, pre-cut salad mix, pre-cut salami, roasted corn, salsa verde, hummus, chicken salad, and tuna salad located on farthest cold top next to egg cooking station range in temperature between 50*F and 56*F. Per PIC, food products were moved from the walk-in and placed in cold top at approximately 5:30 AM to 6:00 AM. PIC stated all food products in cold top were under temperature as a public health control. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control, all TCS foods must be maintained at 41°F or below. Cold holding unit has minimum temperature of 27*F, confirmed via minimum/maximum thermometer. PIC stated cold top lid is broken and does not properly attach to unit. PIC stated ice baths and individual lids will be used to keep TCS foods at the proper temperature until the lid can be repaired. Policy for time as a public health control was also discussed with PIC at time of inspection. Corrective Action: Corrected at time of inspection.
