Observed pico de gallo in prep table on west side of kitchen and cod and halibut in cold holding drawers under the grill with temperatures between 47 and 55 degrees Fahrenheit. Per chef, items were prepared less than an hour prior to inspection. Discussed ensuring that foods that are prepared go in to the walk in to cool to 41 degrees Fahrenheit prior to going to prep tables or cold holding drawers. Corrective Action: Corrected at time of inspection.
