Observed cooked chicken stored in the bottom portion of the prep table with an internal temperature of 83F. Per PIC, the chicken was cooked today and was placed in the prep table to cool. Educated PIC on cooling methods. PIC had an employee moved the cooked chicken to the walk-in for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Discussed removing electric bug zapper in the kitchen due to the zapper is open where the food, food contact surfaces, and single use items are being exposed to the dead insects, also there is no dead insect collector for the zapper. Also discussed removing spray nozzle from the mop sink hose when not in use.

Observed metal scrubber pads in the basin of the hand wash sink located near the dish machine. Per PIC, removed the pads at time of inspection. Observed live cockroaches near the mop sink, behind the prep sink, and behind and under the dish machine. Per PIC, the establishment currently does not have a licensed pest control technician that comes out, the establishment does the treatment themselves. Informed PIC, that the establishment can not treat pest, that a licensed pest control company since conduct the treatments. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection. Corrective Action: Correct prior to re-inspection 4/17/2026.
