Inspector's notes

Observed a few metal pans that were stacked and stored together as clean at the clean dishes rack according to the person in charge. Upon separation and closer observation of the dishes, it was observed that some of the dishes still had food residues on the inside of the dishes. The dirty dishes were taken to the 3-compartment sink to be washed, rinsed and sanitized. All food-contact surfaces must be cleaned to sight and touch. Corrective Action: Corrected at time of inspection.

Observed several pans that were stacked together at the clean dishes rack with water still trapped inside of the pans upon separating them. Discussed with person in charge to air-dry the dishes fully prior to stacking them together. Person in charge separated the wet dishes so that they could finish air-drying. All equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing. Corrective Action: Corrected at time of inspection.
