Inspector's notes

Observed cut tomatoes (49'F) and cut lettuce(51'F) being stored in main prep table on the cook line at time of inspection. Per PIC, the items were restocked in the morning around 9am from the walk-in cooler, about 5 hours prior to inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Observed an accumulation of blue-grey, fuzzy organic matter present on pepperjack cheese being stored in the cold wells of the prep table directly behind the register. PIC was unsure when the cheese was restocked or how long it was placed in the prep table. All food must be in good condition, safe, and unadulterated. All adulterated food was discarded at time of inspection. Corrective Action: Corrected at time of inspection.
