*SECOND CONSECUTIVE VIOLATION* Cold brew coffee-62F in the coffee tap reach in cooler. Cold foam-50F and whipped cream 49-50F in a container of water stored over the coffee tap area. PIC voluntarily discarded all items-see embargo form. Keep TCS foods in cold holding at 41F or below. Ambient temp of the coffee tap reach in cooler was 54F. PIC stated that the unit would not be used for the storage of TCS foods and would be scheduled for repair. Establishment has sufficient refrigeration. Observed cold brew in the tap system at 49*F. Ambient temperature was 41*F using min/max thermometer. Per the person in charge the cold brew was made at approximately 4 am, time of inspection was approximately 10:45 am. Corrective Action: Corrected at time of inspection. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below.
