Observed significant dried-on food residue on food contact surface of table-mounted can opener stored as clean. Food contact surfaces of TCS foods must be washed, rinsed, and sanitized at least every 4 hours after use or as often as needed to be kept clean to sight and touch. Per person in charge (PIC), can opener was last used 2 days prior to the inspection. PIC moved can opener piece to warewashing area to be washed, rinsed, and sanitized. Corrective Action: Corrected at time of inspection.
