Observed an employee with painted/artificial nails scoop ice for customer's beverages and scoop fries into containers, using bare hands without gloves. Employees with artificial/painted nails must wear gloves when working with exposed RTE (ready-to-eat) foods. Employees donned gloves at time of inspection. Discussed the establishment's policy for glove usage when handling exposed food. PIC will retrain employees in order to prevent food contamination. Corrective Action: Corrected at time of inspection.

Observed house-made chili reheating in the steamer in the back of the kitchen, with an internal temperature of 148-155F, probe thermometer, verified by PIC. According to PIC, the chili started reheating more than 2-3 hours prior to inspection. PIC voluntarily discarded the chili, see embargo form. Discussed the establishment's reheating policy and Food Code requirements. PIC will retrain employees to use an adequate amount of hot water in the steamer, set at the highest setting, and stir the chili often in order to reheat to 165F within 2 hours. TCS food items prepared onsite and reheated for hot holding must be rapidly reheated to 165°F within 2 hours prior to hot holding. Corrective Action: Corrected at time of inspection.

Observed raw shell eggs (57-63F) cold holding in the top of the refrigerator next to the grill, and American, blue, asiago, muenster, and shredded cheddar in the top of the make-line with internal temperatures of 55-60F, probe thermometer, verified by person in charge (PIC). According to PIC, the cheeses were placed in the make-line less than an hour prior to inspection and the eggs were cold holding for an unknown amount of time. The cheeses were placed into the walk-in to rapidly cool to 41F or less. PIC voluntarily discarded the raw shell eggs, see embargo form. Discussed the importance of maintaining cold food at 41F or less to limit pathogen growth and avoid causing foodborne illness. Except during preparation, cooking, cooling, or when time is used as a control all TCS food must be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.
