Observed cooked chicken cooling in the reach-in cooler by the cook line packaged in plastic wrap and stacked in a metal container. Internal temperature: 55 degrees. Person in charge (PIC) stated the chicken was cooked within the last 2-3 hours and recently packaged. Chicken was removed from plastic wrap to allow for rapid cooling. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
