Observed arroz con leche in front fruit display at 45*F. Ambient temperature was at 45*F per inspectors min/max. Per PIC arroz con leche was placed almost almost 3 hours prior. Observed Raw meats (chicken, beef, pork, and marinated chicken) at 46*F - 50*F. Per PIC, shipment of produce was received and placed in walk in, leaving walk in open for a prolonged period. Walk in was at 41*F before shipment was received, according to PIC. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Observed in house salsas (tomato and tomatillo based) and guacamole (made with tomatoes) at 47*F - 52*F. Per PIC, products were made day before and placed in cooler opposite to front fruit display. Ambient temperature observed at 52*F. Advised PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Ambient temperature of walk containing raw meats observed at 53*F, per inspector's min/max. PIC confirmed all meats will be fully cooked before being served. Reach in cooler containing home made salsas and guacamole (tomato based) opposite to fruit display observed at 52*F. Reach in unit on the right side of the store observed at 45*F (containing non TCS sodas and Pre packaged desserts). All TCS foods were relocated to alternative functioning units in working repair. PIC submitted work order and was in the process of repairing walk in during inspection. Ambient temperature observed at 47*F and dropping. Advised PIC that Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. PLEASE REPAIR WALK IN PRIOR TO RE INPSECTION WITHIN 24 HOURS. Corrective Action: Correct prior to 24 hour re-inspection.

Informed PIC that the rust and old food debris has the chance to contaminate food, and to avoid this, the shelves need to be cleaned and brought back into good repair or replaced.
