#21 — Proper Hot Holding TemperaturesPriority3-501.16

Inspector's notes

Observed orange chicken, egg rolls, general tso's chicken, cooked vegetables with an internal temperature between 115*F-132*F hot holding on the serve line. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. According to PIC, all TCS items were cooked within the last hour and get discarded after an hour or hour and a half after preparation. After discussion with PIC, the PIC chose to use time as a control for food safety going forward and was instructed to properly time stamp the TCS food at the time of inspection. Corrective Action: Corrected at time of inspection.

Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. According to PIC, all items were cooked within the last hour. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.
