Inspector's notes

High temperature sanitizing dish machine observed at 124*F after final rinse. PIC submitted a work order and set up a 3 compartment sink with sanitizer solution. There were dishes being washed at time of inspection. All dishes were taken to the 3 comp sink to be sanitized. The quat solution at 3 compartment sink measured between 200-400ppm. Establishment had quat test strips readily available. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. Corrective Action: Corrected at time of inspection.

Observed multiple plastic containers stacked while wet on the clean dish rack. Please ensure that containers and other dishes are fully dry before stacking and putting them away. PIC untacked container to allow air drying. Stacking wet items such as pans prevents them from drying and may allow an environment where microorganisms can begin to grow. Corrective Action: Corrected at time of inspection.
