Employee in the cookline area handled raw fish items; then changed gloves, and went to handle a single service container and baked potato without washing hands. Employee was asked to change gloves and wash hands. Ensure that employees wash hands often enough during food preparation to prevent cross contamination and when changing tasks. Of note: Establishment is using time as control for food safety for breakfast/lunch/dinner main hot well line. Of note: Currently establishment permit is a Class 5 E&D. Currently acting as Assited Living dining area. Food Permit may need to be changed to Class 5 Assisted Living with Maricopa County Environmental Services Department.
Inspector's notes
Observed back of house two door turbo air unit with ambient of 44.4*F with min/max thermometer. Inside the unit was prepared salad mix from 6/28 at 46*F-48*F; large tray of raw bacon at 47*F-49*F. Notified Person IN Charge (PIC). PIC confirmed internal temperatures. Per temperature log unit was at 38*F this morning. Internal thermometer reading 45*F. PIC had employees remove all items from refrigerator to be placed into the main walk in unit to cool to 41*F within 30 minutes. Also inside main reach in refrigerator on main cook line had 3 medium size containers of prepared salads all at 47*F prepared on 6/28. PIC moved all containers to main walk in to cool to 41*F. Verified after 30 minutes. Sandwich Unit is at 46*F with min/max. Temperature log had unit at 36*F in morning. =====Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less.
