Inspector's notes

Observed shredded cheese, pastor (pork), chopped lettuce stored in metal cambros while in the cooling process with saran-wrap enclosing the container. Discussed proper cooling parameters with PIC. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. All TCS foods cooling were uncovered to allow for rapid cooling. Corrective Action: Corrected at time of inspection.

Observed salsa being cooled in 5 gallon pot in walk in fridge. Person in charge stated that it had been placed in the fridge 1 hour ago, temped at 90*F. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Discussed cooling methods with person in charge. All TCS foods being cooled in deep containers were transferred to shallow containers to allow for rapid cooling. Corrective Action: Corrected at time of inspection.
