Inspector's notes

Observed hot dogs and taquitos for the roller grills with internal temperatures of 57-64 degrees Fahrenheit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. The items were located in a small reach-in refrigerator that was holding at an ambient temperature of 59F with min-max thermometer. This unit was determined to not be critical to establishment's cold-holding capacities and any in-temperature items were moved to the walk-in refrigerator. This unit shall not be used to store any TCS foods until it can hold cold at 41F or colder. PIC stated that these items were placed in the refrigerator at 6am, more than 4 hours prior to inspection, and voluntarily discarded hot dogs and taquitos. See embargo form.
