Inspector's notes

Observed sealed reduced oxygen packages of surimi-style imitation crab meat in walk-in refrigerator with internal temperatures of 63-65 degrees Fahrenheit. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per person in charge (PIC), crab meat was placed in unit less than 4 hours prior to inspection. PIC removed imitation crab from packaging and placed in a shallow uncovered container to cool rapidly. Corrective Action: Corrected at time of inspection.
