Confirmed ownership. Instructed owner to submit an administrative change form to update the DBA. ////Discussed food storage bags and molcajetes. //// Establishment has black FRP and black ceiling tiles in the front kitchen and back of house. Black surfaces in high splash areas and food prep/cook areas are not approved. Instructed to ensure that the establishment remains bright enough to ensure that the walls and ceiling remain clean. //// Discussed the risks of not having a handwashing sink in the front kitchen. If repeated handwashing violations are ever observed, a handwashing sink may become a requirement.
