Inspector's notes

Observed various pastas in walk-in refrigerator and tall standing refrigerator near register stacked and in tightly covered containers between 49*F-55*F. Per person-in-charge (PIC), pasta was made at approximately 10AM, is placed in an ice bath for a few minutes until it reaches 36*F or below, and is then transferred into containers and placed in walk-in. PIC provided cooling logs for pasta at time of inspection. Cooling temperatures were not yet documented for today's batch. PIC placed all pasta in ice baths to rapidly cool to 41*F at time of inspection. TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Additionally, containers shall be arranged in the equipment to provide maximum heat transfer through the container walls, such as single stacking and maintaining space between containers. Corrective Action: Corrected at time of inspection.

Observed hand sink near walk-in refrigerator and hand sink in west side of building with maximum measured water temperature of 82*F; all other fixtures/hand sinks in the building have maximum measured water temperatures of 110*F or above. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Establishment must restore water with a minimum hot water temperature of 100*F to these fixtures by re-inspection. Corrective Action: Correct prior to re-inspection 01/24/25.
